Ingredients

1 cup raw pistachios

1 can full fat coconut cream

¼ cup maple syrup

1 tsp vanilla extract

Directions

Step 1

If your blender is powerful:

Step 1

Blend pistachios for a couple of minutes until they turn into a paste, add the remaining ingredients and blend until smooth.

Step 2

If not:

Step 1

Soak pistachios in boiling water for 15 minutes, drain and add into a for processor along with coconut cream, maple syrup and vanilla. Blend until completely smooth.

Step 2

Pour the mixture into an ice cube tray and freeze overnight or until solid.

Step 3

Add the frozen cubes into a food processor along with a splash of plant milk and blend until creamy. Pour into a container and freeze for another hour. Scoop up & Enjoy!
