Ingredients
350 g pasta of choice
350 g silken tofu
1 ½ cups basil
2 garlic cloves
⅓ cup walnuts (sub for pine nuts / cashews / pistachios)
2 - 4 tbsp olive oil
Salt & pepper to taste
4 tbsp nutritional yeast extra 12 g of protein! (Optional)
Directions
Step 1
Cook pasta according to package instructions.
Step 2
Meanwhile, toast the walnuts on medium high heat until golden and add to a blender along with the remaining ingredients. Blend until very smooth and creamy.
Step 3
Save about ½ a cup of pasta water before draining it.
Step 4
Pour the sauce over the pasta and add pasta water as needed. Mix well.
Step 5
Serve as is or with with a drizzle of olive oil, chopped walnuts, black pepper and fresh basil. Enjoy!
